For the country blues scale, you want to treat this scale as a more major approach to the blues. It is, in fact, the relative major of the minor blues scale.  Because the b3 is now the “blue note,” this scale is best used when you want to fuzz the line between major and minor - but still remaining “bright.”

Obviously this is most common in country music, but country doesn’t typically follow the blues chord forms of I7, IV7, V7.  Maybe the V chord will be dominant, maybe it won’t. 

The point is that the 7th isn’t in the scale so it’s very bright, but the b3 still makes it sound bluesy.  Try playing this in a few different keys, and explore the different sounds you can get when you play from a key centered approach vs. switching for each chord.
