This video of Blake Mills covering Bob Dylan's "When I Paint My Masterpiece" (with Bob Dylan's actual Fender Strat from his performance 50 years earlier) is perhaps the best video I have seen that showcases how much musical texture you can achieve with one guitar and one voice. Blake uses so many techniques with his right hand that make each verse and chorus sound different and exciting.

The video is edited to include scenes from the festival, so there are parts you can't see Blake play, but I trust your ear to dissect what he is doing.
